Flavor profile

This Colombian coffee from the region of Planadas, Tolima is a honey processed coffee. The mucilage was left on the seed for an extended period of time, and then sun dried. This leads to a sweet and thick body, and sometimes fruitiness and complex acidity. For this particular bean we see more complex acidity than warm, earthy sweetness. Roasted lightly, this bean delivers a sweet tasting body with a side of lemon-y tang!

This honey process is our first direct trade coffee! Meaning we are partnered directly with the farmers and family who grew the lot. Coffee producer Jorge Rojas is a fourth gen coffee producer, with his farm spreading over 3 hectares having a diverse range of varietals.

Jorge and his family have created their own brand, La Roca, where he roasts coffee. He is currently in the process of acquiring a wet mill to process cherries from neighboring farms, increasing his production and the farms around him.


Conical Brewing method:25g coffee - 400g water (temp: 205 f ) - total time: 3:30 min
Espresso: 2:1 ratio recommended: 18g in 36g out.
